Coffee & Walnut Muffins

Ingredients:
Makes 6 muffins
1/4 cup coffee
3/4 cup alternative milk
2 tbsp coffee & walnut butter
2 tbsp maple syrup
1/2 tsp vanila essence (optional)
1/4 tsp salt
1 banana
1 tbsp baking powder
1 tbsp apple cider vinegar
1.5 cups flour (oat/plain/GF)
1/2 cup blueberries
Method:
1. preheat over to 180 degrees2. Mash the banana in a mixing bowl
3. Add the wet ingredients
4. In a separate bowl, mix together the dry ingredients
5. Add & mix into the wet mixture
6. fold in the blueberries
7. Either grease muffin tin or use muffin cups
8. Make sure to leave space to rise or you’ll get muffins shaped like mountains!
9. Bake in oven for 15-20 minutes.
10. Enjoy!
